<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">The HOTLOGIC<sup>®</sup> User Guide and the company&#8217;s website say that you cannot cook a potato in a HOTLOGIC<sup>®</sup>. The information is correct, unless you follow this method. If you use this exact brine recipe, the potato will fully cook just waiting for butter to top it.</p>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">I used a Russet potato, cleaned it, sliced it, soaked in brine overnight and then cooked it for 8 hours in the brine water, and it came out cooked perfectly. I could easily break it apart and fluff it with a fork.</p>

<h2 class="wp-block-heading">Questions</h2>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">Because I am rushing to make this information available quickly after my successful experiment, I don&#8217;t know the answers, yet, to these natural questions:</p>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--50);margin-right:var(--wp--preset--spacing--50);margin-bottom:var(--wp--preset--spacing--50);margin-left:var(--wp--preset--spacing--50)"><strong>Will this work with any type of potato?</strong> Yes, this method will cook russet, red and white potatoes<br><strong>Can I use any type of salt?</strong> No, potatoes soaked in brine made form the pink salt are barely cooked and hard after 8 hours. After 8 hours the potatoes in the Canning &amp; Pickling salt solution are well cooked and tender.<br><strong>Does it have to cook for 8 hours?</strong> Depends on how &#8220;done&#8221; you like your potato. Canning &amp; Pickling salt solution after 6 1/2 hours produces potatoes that are just cooked and starting to get tender.</p>

<h2 class="wp-block-heading">Salt</h2>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">Surprisingly, more salt was actually a problem and hindered the cooking process. I used Canning &amp; Pickling salt so that it would dissolve completely in the room temperature water. In one container I used one (1) teaspoon of salt with two (2) cups of water. In the other, I mixed two (2) teaspoons of salt with two (2) cups of water. After soaking the potato slices overnight and cooking in the salt water for 8 hours, the potatoes in the lower salt solution cooked completely. The potatoes in the higher salt solution, were not.</p>

I was pleased to see that it cooked well.</p>

To make 2 cups of cooked grain takes half a cup of dried grain and 1 cup of water or broth and season to taste. The only issue I had was with the floating seeds. The floaters tended to not absorb any water and stayed hard. I learned to stir the seeds into the liquid before cooking.</p>

I cook a half a cup of quinoa with one cup of water. Once it&#8217;s cooled, I am ready to mix up the ingredients. This recipe is cooked overnight because it takes 10 &#8211; 12 hours for the treat to completely dry out.</p>

For over a year, I cooked this vegetable first and then reheating later. I realized that this was a waste of electricity and my time because this vegetable cooks just fine in a HOTLOGIC<sup>®</sup>. </p>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">The one downside of cooking a green vegetable in a HOTLOGIC<sup>®</sup> is that it will lose color the longer it stays cooking/heating. It is one vegetable you may not wish to leave in all day.</p>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">Variations can be made to the recipe below. Instead of broccoli, you can use frozen cauliflower. A different fat, such as olive oil or bacon grease, can be used instead of butter. You may have a different seasoning that you prefer to use.</p>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">I haven&#8217;t tried reconstituting <a href="https://amzn.to/40KOP1R" target="_blank" rel="noreferrer noopener sponsored nofollow">freeze-dried broccoli</a> and seeing how well it tastes cooked liked this. When I tried freeze-dried cauliflower, I really did not like the taste of it. I don&#8217;t know if it was the brand or if a change in flavor that always happens to cauliflower when freeze-dried. It is not a consideration to see if it works as a variation to this recipe.</p>



<p class="has-text-align-justify" style="margin-top:var(--wp--preset--spacing--20);margin-right:var(--wp--preset--spacing--20);margin-bottom:var(--wp--preset--spacing--20);margin-left:var(--wp--preset--spacing--20)">I have successfully reconstituted freeze-dried broccoli and had it with alfredo sauce, so it might work fine with this recipe. Eventually, I&#8217;d like to experiment and try the freeze-dried broccoli in the <a href="https://hlcooking.com/egg-casserole/">Egg Casserole</a>.</p>
